I bet you can’t guess what I’ve been eating lots of…

…WATERMELON!!! [wide-eyed grin]


Fresh watermelons are usually available from May to September, but the season tends to peak in the middle of June through August. Most of us are accustomed to watermelons with pink or red flesh, but depending on the variety the inside can also be yellow or orange or even white. So if you find any watermelons like those, rest assured your eyes have not failed you! [chuckle]

In addition to lots of vitamin C, watermelons are also a good source of vitamin A as well as magnesium and potassium, and the ones with pink or red flesh are also high in lycopene. Talk about a fun way to quench your thirst on a hot day and get loads of healthful nutrients at the same time!

Instead of cake, this year we did something different.

We made pie…

…for Mom’s birthday! [ginormous grin]

Shazzie’s “Violet’s Violent End” was a most scrumptious choice with an apricot, almond and oat groat crust filled with a creamy mixture of blueberries, cacao and cashews.

“Mmm-MM!” Finger lickin’ good!

Everyone enjoyed it immensely, and very happy we were as Mom fell in love with her treat at the first bite. We’ll definitely be making this one many times over.

Cucumbers and oranges make a great combination…

…add a squeeze of lemon for a bit of zing and you’re good to go!

Most everyone is aware that oranges are excellent for immune support. Cucumbers are wonderful for healing and rejuvenating the skin as well as providing a healthy dose of hydration. Pair the two together and you’ve got a pretty potent blend.

Well, sort of!

When I saw what looked to me like a big pair of eyes, that was the first thing to pop into my mind.

Here’s another beaut from Ms. Stokes that’s sure to make you smile! I found myself giggling with delight at her absolutely creative lyrics focused on the importance of greens. This tune will be hummed a lot, methinks. I’ll admit that I can imagine myself singing a bit (possibly even a doing quick twirl) while prepping my next green meal.
