1 very large Garden cucumber, cut into spears
2 medium red apples, cored and quartered
1-inch by 3-inch piece of fresh pineapple, peeled (cored optional)
Put all of the ingredients through a juicer of your choice, stir lightly and enjoy!
A few tips…
To help limit your exposure to harmful pesticide residues and waxed coatings often associated with conventional produce, try to purchase organically grown fruits and vegetables as often as possible.
The listed ingredients should amount to roughly 16 ounces of juice, depending on how much liquid your cucumber, apples and pineapple piece yield. It is best to serve fresh juices soon after they are made due to oxidation and degrading of nutrients. However, they can be tightly sealed and placed inside the refrigerator for short-term storage (a day or two).
When juicing cucumbers I like to use the flavorful Garden variety, but an English cucumber can instead be used if you prefer a milder taste.
Overall sweetness will depend on the type of red apple you choose. There are several red apple varieties. Following are a few ideas.
- Slightly sweet: Braeburn and Gala.
- Sweet tart: Cameo, Jonagold, McIntosh and Pink Lady.
- Very sweet: Ambrosia, Fuji and Red Delicious.
In the list of ingredients, I noted 1-inch by 3-inch piece of fresh pineapple, peeled (cored optional). Pineapple cores can also be juiced. In general, remember to hang onto those gems after you have peeled and prepped your pineapple. Quite a bit of liquid can hide inside the core, not to mention extra nutrients. Fresh pineapples are readily available in many international markets, as well as some large chain grocery stores and health food stores. A ripe pineapple will be quite aromatic with leaves that are easy to remove and an outer rind that is more yellow than green.
Save the leftover pulp for adding to soups or as an ingredient in making breads or crackers. No need to throw that extra goodness away! The leftover pulp can last a day or two if stored in a tightly sealed container and kept inside the refrigerator. If you are not able to use the leftover pulp in that amount of time, storing it inside the freezer may be a better option.
