I bet you can’t guess what I’ve been eating lots of…

…WATERMELON!!! [wide-eyed grin]

Fresh watermelons are usually available from May to September, but the season tends to peak in the middle of June through August. Most of us are accustomed to watermelons with pink or red flesh, but depending on the variety the inside can also be yellow or orange or even white. So if you find any watermelons like those, rest assured your eyes have not failed you! [chuckle]

In addition to lots of vitamin C, watermelons are also a good source of vitamin A as well as magnesium and potassium, and the ones with pink or red flesh are also high in lycopene. Watermelon seeds provide a nice dose of iron, zinc, phosphorus, fat and protein, so be sure to munch on a few of those as you find them. Talk about a fun way to quench your thirst on a hot day and get loads of healthful nutrients at the same time!
