Yep! Yummy madness! [giggle]

This is one of several different types of veggie platters you’ve seen me reference in my Daily Food Dairy.

Shown above is a bowl of Savory Sesame Crackers next to a large helping of green leaf lettuce, thyme-infused peppers, Pickled Buttons, sweet onions, avocado, red tomato, and yellow tomato with a savory nut spread placed in the middle. We created all sorts of combinations and ate until we were full. Light and crisp sesame crackers topped with a dollop of herbed nut spread, a sprinkling of infused peppers and mushroom pickles, and several strips of marinated sweet onion…YUM. Or how about a mound of avocado, some yellow tomato, a few strips of marinated sweet onion, and green leaf lettuce sandwiched between two light and crisp sesame crackers? Now that doesn’t sound so boring, does it? [wink]

What keeps something like this fun and easy is selecting from whatever you have available that you naturally like, and then putting it all in one place so you can pair different things together. You don’t have to eat the same combo twice if you don’t want to. A quick and easy meal like the one pictured above is great example of how to keep it simple yet interesting.
