…spicy corn tortillas with a red pepper sauce.

This particular one with avocado, plum tomato, arugula and radicchio. “Mmmmmm!”

The recipe for the tortillas was created back in August ’06 and we still love having them when fresh organic corn is abundant. Stocking up on and freezing fresh corn is great for when you have a hankering and no fresh corn is available. Most frozen corn found in stores will likely have been blanched prior to being frozen, so it’s often best to obtain fresh corn when you can and freeze it yourself. Just be sure to remove the kernels from the cob first…seriously! [giggle]
